Tapioca flour is created from the starch of the cassava root plant, and can be used as a gluten-free thickener. A fine, white powder, tapioca flour can be added to other flour alternatives. Tapioca flour can also be used as a thickening agent for sauces, pie fillings and gravies, giving a clear, glossy finish. These will also freeze well if preparing in advance. Gluten free. Directions: How to thicken a sauce: Mix 2 to 3 teaspoons of flour with 2 or 3 tablespoons of cold water or milk. Stir into hot liquid cooking gently as the sauce thickens.
